BEER is
a brewed and fermented beverage made from malted
barley and other starchy cereals, flavored with
hops. During fermentation the yeast sinks to the
bottom; hence beer is a bottom-fermentation brew.
Beer is also the generic term for all malt beverages. |

LAGER is
a bright, clear, light bodied beer that is sparkling
and effervescent, brewed from malt-and in some
cases from prepared cereals such as corn grits
of cracked rice-hops, and water . The resultant
work is fermented and lagered (stored) for aging
and sedimentation. After this period it is krausened,
or carbonated. All American beers are the lager
type. |

PILSNER is
a term employed universally on labels of light
beers. The original and most famous is the Pilsner
Urquell from Pilsen, Czechoslovakia. By labeling
their beers pilsner other brewers wish to convey
the impression that their beer is similar to that
of a Pilsen. All Pilsners are bright, light, lagered
beers, but none come close to duplicating the original.
Pilsner is not a separate type of beer, as bock
beer is. |

BOCK BEER,
OR BOCKBIER is a
special brew of heavy beer, usually somewhat darker
and sweeter than regular beer. It was originally
brewed in the spring, but it no longer has any
seasonal significance. Some people think the name
is a corruption of Einbecker Bier, from the town
of Einbeck, Germany. “Einbock”
translates to “a goat” in German so
the beer became known as “bock” or “goat”
beer There is no legal definition for bock beer,
and it varies with the brand. |

MALT LIQUOR is
a malt beverage, brewed lie beer, that usually
has a higher alcohol content than beers, the percentages
of alcohol being regulated by each state. in Ohio,
for example, the range may be from 3.2 to 7 percent
by weight, and in Oregon it may vary from 4-8 percent
by weight. The color is usually light and pale. |

CREAM ALE is
a pale beer fermented with a top-fermenting yeast.
It has a hop taste flavored with vanilla. ALE is
an aromatic brew made of malt or malt and cereal
and is usually fully bodied and more bitter than
beer. Ale is fermented at a higher temperature
than beer, and most of the yeast rises to the top
of the brew; hence ale is a top-fermentation brew.

PORTER is
the predecessor of stout and is lover in alcohol,
with a dark color and bitter sweet taste. As its
producers increased its alcohol content it was
referred to as an “extra stout” porter,
and stout soon became a separate product. |

STOUT is
a very dark ale that is malty and slightly bitter,
flavored and colored by the edition of roasted
barley to the brew. |

WEISSE / WEISSBIER “White”
beer, German term for a wheat beer, implies a pale
head and an often cloudy brew. This top fermented
beer is made primarily from wheat with a limited
amount of barley malt. |
